Massage your Kale Salad

So many times I have heard that kale is tough, bitter or "I just don't like it". we use kale in our salads at home all the time. There is a trick to using raw kale in salad to cut the bitterness and the toughness.

What you will need: Lemon or lime juice and sea salt finely ground. chopped Kale, baby spinach, shredded broccoli and carrots, dried cranberries, walnuts or almonds, red onion, Mandarine oranges, diced apple (your choice I like Gala apples), your choice cheese if desired I would recommend either a gorgonzola or mozzerella but use what you would like.

1 bag or 1 1/2 bunches of kale chopped (bite sized)

2 tsp lemon/lime juice

1 tsp sea salt

1 1/2 bag baby spinach (chop if you would prefer)

1/2 bag prepped broccoli and carrot mix

1/4 cup dried cranberries

1/4 cup Mandarine oranges

1/2 cup chopped Strawberries

1 chopped apple

1/4 cup chopped walnuts/almonds

1/4 cup cheese

topping:

Hemp seed

1/2 small/medium red onion sliced

in large bowl add kale lemon/lime juice and salt, massage the kale with this mixture until tender, drain remaining liquid from the kale and add in the remainder of your main ingredients. mix the salad well. top with hemp seed and sliced onion

you don't need a dressing with this salad but if you would like one I recommend a vinegarette or poppyseed dressing

***you can also add egg or grilled chicken to this salad if you would like
